The Rise of Big Food
What does 'big food' mean?
During the 1800's transportation systems were creating reduced travel times for goods and service. The installation of rail and vast networks created excellent distribution systems for food. This greatly expanded markets for many products specifically those that had long shelf lives. This lead to market dominance for companies that could take advantage of these new systems. Food became a commodity in of itself, and held little value as a necessity for human survival, and more of good valued for its capacity to produce profit.
