The Chemical Revolution
Why were chemicals ever added to food?
With technological advances in processing and the creation of synthetic additives during World War II, meant food was able to be kept for indefinite periods of time. During times when food could not be transported or needed to be kept in areas without refrigeration these 'advances' were thought to be great benefits to feed the ever increasing populations of people removed from the food production process. These changes in the food system fed into the human bodies desire to capture these quick sources of energy. They also however were increasingly deprived of nutrients vital to the proper function of many human organs and systems. Additives and preservatives were critical to both increase profits and to increase the likeliness that products were purchased not out of need to sustain and feed, but out of a desire to satisfy a purposely created craving for sugars and foods high in processed carbohydrates.
