How has the industrial revolution influenced diet?
The Industrial Revolution brought about another large change in living patterns for a large percentage of the world's population. People moved to the city from rural areas where they had more immediate access to less processed food. The move was driven in part by the promise of better living and opportunity. While most of the food was still produced in rural areas the need was in more populated cities. This drove the food supply to increasingly rely on processing for preservation in order to transport and store. This reduced the nutrients in food with the use of preservatives and reduction of whole foods. Adding to the population migrations to urbans spaces, there was also a population expansion due to better hygiene, medical technologies and other advances. This put pressure on the food supply to provide for many who were now unable to create their own food sources.
